Applications are invited for a temporary post of a UCD Research Fellow within UCD Biology and Environmental Science.
We want to combine our collective expertise to develop complex mycoprotein substrates (CMS ) as both a food and feed, based on filamentous mycoprotein produced on waste crop residues, enriched in both protein and fibre, and nutritionally superior to many other alternative protein sources. Prototype products will differ from existing mycoprotein, in that we capatilise on our knowledge of plant-fungal interactions to develop mycoprotein that can rapidly convert plant residue to food and feed and yield a product that is thus higher in fibre and more sustainably produced. During 2022/2023, a one-year scoping study conducted as part of the DAFM-funded research stimulus project Protein-I highlighted the potential of plant pathogenic fungi to convert spent grain from breweries into a complex fibre-rich protein product. Building on this, FungiTech will assess the nutritional composition, food safety and market potential of these alternative protein products, conduct research to ensure that mycoprotein meets the EU Novel Food Regulation requirements and work with our Societal Champion partner LAN-CTR to evaluate the potential of the development of this technology as a component of the evolving Northwest Bioeconomy Hub.
The purpose of the role is to deliver a specific research project. The role allows the Research Fellow the professional development opportunity to demonstrate the capacity for independent and self-directed research and scholarship and the management of a research team. The role allows the Fellow to assemble a portfolio of independent achievement and render themselves competitive for tenured academic positions or senior scientific roles in industry.
Salary Range €61,318 - €63,096 per annum.
Appointment on the above range will be dependent upon qualifications and experience.
