We are currently seeking a highly skilled and motivated Head Chef to join our dynamic culinary team. This is an exciting opportunity for a culinary professional who is dedicated to excellence, passionate about food, and committed to maintaining the highest standards in meal preparation and kitchen operations.

The position comes on a 35 hour/week contract, with paid overtime, 23 days annual leave plus 8 days for bank holidays and a further 6-9 days for university closure days. What will you be doing?

Menu Design:

  • Create balanced, nutritious, and appealing menus catering to dietary needs and preferences.
  • Incorporate seasonal and locally sourced ingredients.

Kitchen Management:

  • Oversee daily operations: food preparation, cooking, and presentation.
  • Maintain cleanliness, organization, and safety.
  • Ensure all kitchen equipment is well-maintained.

Staff Supervision and Training:

  • Recruit, train, and supervise kitchen staff.
  • Conduct performance evaluations and provide coaching.
  • Schedule staff shifts and manage labour costs.

Inventory and Budget Management:

  • Manage inventory: ordering, receiving, and storing supplies.
  • Monitor and control food and labour costs.
  • Implement strategies to minimize waste and maximize efficiency.

Health and Safety Compliance:

  • Ensure food safety and sanitation standards are met.
  • Conduct safety training and maintain safety records.
  • Handle allergens per legal and University standards.
  • Respond to health and safety concerns promptly.

Community Engagement:

  • Gather feedback from students and staff to improve dining experiences.
  • Organize and participate in cooking classes, nutrition workshops, & farm-to-table events.
  • Promote healthy eating and sustainability.

You should apply if

You have:

  • Level 3 qualification in cooking OR equivalent practical experience.
  • High level of culinary skill with the ability to produce food for student meals, conferences, functions and wedding receptions, day meetings and special meals.
  • Ability to prepare and present food to a high standard.
  • Level 3 food safety qualification accredited by the Royal Institution of Public Health and Hygiene or the Chartered Institute of Environmental Health.
  • Experience in a senior culinary management position in a reasonably wide variety of catering establishments, including hotel and/or restaurant work.
  • Understanding of the requirements of the differing customer types served by the University.
  • Good knowledge of catering budgets, understanding food costs and gross profit margins.
  • Strong communication and leadership skills
  • Experience as a senior chef in both an education setting and commercial operation.
