The School of Food Science and Nutrition is the oldest such university department in the UK, and is continuing to grow its staff numbers, expanding its academic capability in food material science. Our aim is to provide mechanistic evidence of the importance of material science governing food structure and its multi-scale dynamic properties upon consumption.
